Catering wastewater has complex components, low PH, high SS, high turbidity and high organic content, mainly including food fiber, starch, fat, animal and vegetable oils, various condiments, detergents and proteins. According to the detection of catering wastewater in some areas, the COD in catering wastewater is 300-2633mg/L, SS is 300-400mg/L, NH4+- N is 6-50mg/L, BOD5 is 300-900mg/L, pH is 5.81-6.55, TN is 3.4-45mg/L, and oil content is 6.7-20mg/L.

Because of the particularity of the water quality of catering wastewater, the treatment method of catering wastewater is generally divided into two stages: pretreatment and treatment. In practical application, many technologies are often used together. The main goal of treatment is also to remove COD, suspended solids, animal and vegetable oils from catering wastewater. Pretreatment is the basis of the treatment process, and treatment is the deepening of the pretreatment process, both of which are indispensable.

1. Pretreatment technology of restaurant wastewater

Catering wastewater contains a large amount of suspended substances and animal and vegetable oils, which can block dissolved oxygen in the atmosphere from entering the water body. During the treatment process, oils can also wrap around microorganisms, causing them to die of hypoxia, affecting the treatment effect. A large number of suspended substances are mostly food scraps with large particles, which are difficult to be used by microorganisms. In addition, it is easy to cause blockage of treatment facilities during the treatment process, which brings difficulties to the treatment. Therefore, the pretreatment of restaurant wastewater has become a very important link and means in the treatment process.

2. Specific processing flow

Firstly, the restaurant wastewater directly recovered from restaurants and restaurants shall be mechanically removed to remove large impurities such as bones, vegetable leaves and even cloth strips for washing, as well as impurities such as starch, protein, sugars, detergents and colloidal substances. Then oil and water are separated from the liquid part. For the oily part, the waste oil is obtained by acid precipitation and water washing, and the acid dosage in the acid precipitation process is better to control the pH value between 2-3. The water after oil-water separation is mixed with the water for washing, and then the water quality and quantity are adjusted through the regulating tank. After that, the water is pumped to the coagulation floatation tank to remove most SS, oil and some organics, and then biochemical treatment is carried out.
